Comté is produced in the Franche-Comté region using unpasteurised milk from Montbéliarde cows fed on grass growing in the meadows of the Jura mountains.
This is a very old cheese. References to “fructeries” (so called because the milk producers were able to “fructify” their milk, in other words make it bear the fruit of their labour) or “fruitières”, meaning small cheese dairies, began to appear around the 13th century, showing that “large form” cheeses were already being made over 600 years ago. A Comté wheel weighs between 30 and 55 kilograms
Ermitage Comté comes in two forms, one matured longer to give a stronger taste and the other milder and fruitier.
The ideal solution for meeting different consumer tastes, Comté is a cheese to be enjoyed any time of day, it is also perfect for adding that extra bit of taste to recipes

Made using only specially selected milk, Ermitage Comté is matured very slowly to bring out all the character of the Jura. You'll love its nutty taste and woody flavour.
