Ermitage Langres is produced at Fayl Billot, a small town in the Haute Marne with a worldwide reputation for the quality of its basketwork.
The cheese is made with milk from cows grazing on the plateaux of Bassigny and Langres. Production is traditional and has changed very little over the centuries, while its qualities were celebrated in an 18th century song, composed by the prior of the Langres Dominicans.
Langres has a light yellow rind which turns brown red as it matures and is easily recognised through the slight indent in its surface (called the fontaine, or fountain, in France), into which Burgundy or Champagne marc brandy is sometimes poured to enhance the flavour.
