The Ermitage cheese dairy, almost 80 years of cheese-making.
It was back in 1931 that 211 local milk producers decided that to preserve their independence and make top-quality cheeses, they would set up the Coopérative de l'Ermitage. The company is in Bulgnéville, a small town in the Vosgesmountains, and is still entirely owned by the coopérateurs, or milk producers, although nowadays there are over a thousand of them!
