Shortbread with Tome du Lomont - by Chef Nini


  • 5 g flour
  • 85 g of ointment butter
  • 50 g of Tome of Lomont Ermitage
  • 4 cl of milk
  • Poppy seeds
  • 1 tablespoon dried thyme
  • Salt


  1. Sand in your hands the butter with the flour.
  2. Add the milk, salt, and grated Tome du Lomont. Knead until you get a ball.
  3. Shape the dough into pudding.
  4. Mix the thyme with the poppy seeds and coat the dough with this mixture.
  5. Wrap with a cling film and reserve for 1 hour.
  6. Slice the pudding and place on a baking sheet.
  7. Preheat oven to 180 ° C and bake for 25 minutes.
  8. Let cool completely before serving.
